Summary: A delicious winter breakfast

Ingredients

  • 1 tsp olive oil
  • Quarter of a julienned onion
  • Approx 6 leaves of chiffonade swiss chard (stems removed and cut into long thin strips)
  • 2 eggs

Instructions

In a medium sauté pan, over medium heat, add olive oil and onion. Saute until the onion is soft and translucent, about 3 minutes. Increase heat to medium high,and add the swiss chard. The pan will sizzle; stir the swiss chard one time and push to the center of the pan. Add 2 cracked eggs on top of swiss chard. Cover with lid and decrease heat to medium low. Allow eggs to poach for about 2 minutes. Turn pan off and let rest for another 2 minutes. Remove lid and serve immediately. Season with salt and pepper to taste.
