Food & Wine Harvest Festival - September 25 - 26, 2010

Aqua Terra Culinary rolled into the 2010 Food & Wine Harvest Festival at Quail Lodge to wow the crows with a simple carne asada taco recipe with onion, cilantro and broccoli rabe (yes, broccoli rabe) inside a small, warm corn tortilla. Dory Ford also presented a brief demonstration on Sunday to highlight the recipe and local ingredients.

   
Blue Ocean Film Festival - August 25 - 29, 2010

EJ, Allison and staff of Aqua Terra Culinary managed creative catering for the Blue Ocean Film Festival Awards after party and auction in the Marine Maritime Museum. The BLUE Ocean Film Festival is a global film festival and conservation summit for underwater filmmakers and marine researchers.

   
Pigs n' Pinot - August 21, 2010

An exclusive yet relaxed and down-home wine and culinary feast, featuring the finest high-end local Pinot Noirs (and other wines) poured by the winery owners and winemakers, paired with pork and other delicacies prepared by Monterey County's top chefs. Dory Ford of Aqua Terra Culinary prepared pork braised in plums, ginger beer, and anise served in fresh buns.

   
Safeway Invitational - June 7, 2010

Chef Dory Ford was asked to return and head-up the culinary experience for the prestigoius Safeway Invitational on the spectacular Bayonet Blackhorse Golf Course in Seaside, CA. The many service stations created and managed by Ford included varied food selections.

   
Cooking for Solutions - May 21, 2010

With lobster from the Maine Lobster Council and fresh fava beans from Swank Farms in Hollister CA, Aqua Terra helped celebrate sustainable cooking at the Monterey Bay Aquarium at Cooking for Solutions. The recipe also included mashed potatoes and a generous topping of shaved truffle.

   
Pebble Beach Food & Wine - April 11, 2009

Chef/Owner Dory Ford worked with local farm fresh ingredients from Andy Boy, Driscoll’s Berries and California Olive Ranch. His Pebble Beach Food & Wine creations included: Mixed Berry Cordonniére with Green Peppercorn Ice Cream; Open Faced Rapini, Organic Italian Sausage and Pinenut Ravioli with Shaved Fennel and Citrus Slaw; and Yucatan Chicken and Nopales Salbutes with Habanero Hot Sauce.

   
Safeway Event - June 7-9, 2009

The inaugural Safeway Invitational was held June 7-9, 2009 at the historic Bayonet and Black Horse Golf Course overlooking Monterey Bay in Seaside, California. The event raised more than $2.5 million for The Safeway Foundation. Over 40 celebrities from the worlds of sports and entertainment joined Safeway’s senior management team and top suppliers such as Coca-Cola, Kraft, General Mills, PepsiCo and Anheuser Busch for a world-class golf experience to raise significant funds and awareness for the Safeway Foundation.
