Ingredients

  • 1 pound Dungeness Crab Meat
  • 2 tsp Lemon Juice
  • 2 tbsp Mayonnaise
  • 1/2 tsp Salt
  • 1/8 tsp Pepper
  • 1 tbsp Parsley and Chive mix
  • 1/4 cup Bread Crumb
  • Additional Bread Crumb as needed to coat balls

Instructions

  1. Drain and squeeze water from crab meat. Check meat well to make sure there are no shell pieces.
  2. Fold in the lemon juice, mayonnaise, salt, pepper, herbs, and bread crumb.
  3. Scoop into 1 oz balls.
  4. Pat into round paddy shapes in a dish of bread crumbs, coating evenly.
  5. Fry in saute pan over medium-high until golden brown.
  6. Serve with lemon aioli or your favorite sauce.
